Lapin puikula is a Finnish landrace potato that grows best in Lapland. This potato variety has Protected Geographical Status under European Union law.
Due to the high starch content of this potato variety, I recommend that you pay close attention when cooking them - just a minute too long in boiling water and they will disintegrate into an unappetizing slurry. These are great for making mashed potatoes and puréed soups. If you wish to cook them peeled and serve them whole, you may want to try steaming rather than boiling them. If you do boil them, make sure to add plenty of salt to the water.
